Wild Goose, a new food and drink spot from the team behind Grub Fresh Food, is set to open this summer in the final pavilion of the redeveloped gardens. And it’s not your average café.

Wild Goose promises a high-quality brunch like you’d find in Glasgow’s West End or a hidden gem in East London, brought to the heart of Aberdeen. Upstairs is a sit-down restaurant with a menu built around local sourcing and seasonal produce. Downstairs, things get a bit more playful with a bar and the return of How Bao Now, the Asian street food favourite that made waves at Bar 99.

Oh, and they’ve transformed the old Victorian toilets into a sleek new event space. No joke.

Behind the project is Stuart Ross, the brains and taste buds behind Grub, who saw a gap in the market and decided it was time Aberdeen had a place that could hold its own against the brunch scene in bigger cities.

“We spotted a real gap for something like this in Aberdeen – brunch done properly, great drinks, a bit of style. We’re sourcing as much as we can locally and it’s great to give How Bao Now a permanent home too,” says Stuart.

The name Wild Goose isn’t just quirky branding – it’s about movement, journey, and landing in the right place. Inspired by the global food and drink scenes Stuart and the team admire, the venue is designed to take guests somewhere – whether that’s through bold, punchy flavours, curated cocktails, or just a damn good flat white in the middle of the city.

The visual identity comes from local creative agency Mearns & Gill, who have created a brand that balances style and substance. Creative Director Mairi MacLeod Gray explains:

“It was all about creating something refined but still full of personality. The logo ties the restaurant, bar, and event space together, and we’ve used a mix of modern type and natural textures to root it in the space. It’s contemporary, but grounded.”

Wild Goose is the latest addition to the £28.3 million revamp of Union Terrace Gardens – a project that’s made the gardens more accessible and more usable for everyone, with proper paths, a new play area, and just the right amount of history still in place.

With Wild Goose opening its doors soon, the gardens are set to become more than just a pretty place to walk through – they’re becoming somewhere to properly spend time.
